Vietnamese restaurateur Hieu Trung Bui moved from Saigon to London 10 years ago and worked in a number of Vietnamese restaurants on Kingsland Road but, frustrated with the lack of good quality, authentic Vietnamese food, opened his own restaurant, Cay Tre Old Street, where he also runs the Kêu Banh Mi Deli. He said: "My mission is to modernise the reputation of Vietnamese food, to encourage people to take a fresh look, and to be inspired as much by the food as by the environment they eat it in."
